Irvine, CA (April 2011)—With two premium products at the peak of their highly anticipated seasons, the California Avocado Commission (CAC) and the Copper River/Prince William Sound Marketing Association (CRS) are teaming up Fresh California Avocados and Copper River Salmon in an initiative that looks to double every foodservice operator’s summer menu possibilities. In conjunction with a retail promotion that runs from June 20th through July 24th, the two organizations will be spotlighting customer preference for the superb quality and flavor of their Alaska salmon and California Avocados.

An ideal match for summer’s lighter palate, chefs can pair these renowned regional specialties in a myriad of preparations. A quick turn in a hot pan seals in the unique and delicate flavor of Sautéed Wild Copper River Salmon with California Avocado, Tomato and Mango Salad. Summer fruits like Fresh California Avocado show their best savory side in this colorful entree.

CAC and CRS have created three more superlative seasonal dishes featuring Fresh California Avocados and Copper River Salmon: Lomi Lomi Salmon on a California Avocado Half-Shell, Spinach Salad with Pan-Seared Salmon, Oranges, Red Onion and California Avocado and Chili-Rubbed Salmon with California Avocado-Cilantro Salsa.
